SERVES 4 TO 6 / PREP TIME: 10 MINUTES / COOK TIME: 20 MINUTES
I first had bouillabaisse a few years ago while vacationing in southern France. At that time, Ibarely knew what it was, let alone how to pronounce it. I fell in love with this Provençal stewmainly because of the fresh variety of seafood and the distinct flavor combination from the fennel, orange zest, and saffron. It took me a while to build up the courage to make it at home. But once I finally gave it a try, I realized it wasn’t difficult at all to make, and it fit mystyle of cooking perfectly because everything cooks right in one pot.
Sweet Potato “Toast”
SERVES 4 / PREP TIME: 5 MINUTES / COOK TIME: 15 MINUTES
This is basically a sweeter, lower-carb version of your traditional avocado toast. There isactually no bread involved in this recipe at all—our “toast” comes from the sweet potato. Give it a try and you’ll see what I mean!
SERVES 4 / PREP TIME: 10 MINUTES, PLUS 30 MINUTES TO CHILL
I love being sneaky with tofu and hiding it in foods where no one would ever suspect it. It takes on the flavor of all the other ingredients. When I make this mousse, I feel like theultimate sneaky chef..
