What you'll need:
1 large zucchini, spiralized using a Veggetti or Spiralizer
1/2 cup grape or cherry tomatoes, halved
1 handful of basil, washed and chopped
dressing:
2 tablespoons olive oil
2 tablespoons balsamic vinegar
Optional: balsamic glaze to make it pretty
How to make:
Combine spiralized zucchini, tomatoes and basil in a large bowl. In a smaller bowl whisk together oil and vinegar. Drizzle the dressing on the salad and toss until evenly coated.
