What You'll Need:
1 quart vegetable broth, reduced sodium
1/3 cup lentils, uncooked
1/2 cup edamame, out of the shell
1/3 cup quinoa, uncooked and rinsed
1/2 head of radicchio, washed and shredded
How to make:
Over medium heat, bring broth to a boil. Add quinoa and lentils and cook for 10 minutes,. Add radicchio and edamame and cook for another 5 minutes. Once lentils and quinoa appear cooked the broth bowl is finished. Enjoy!
