1 slices 100% whole grain bread, toasted
1/2 medium sweet potato, diced
3 cups BroccoLeaf
2 tablespoons of broth or water
3 teaspoons coconut oil, divided
Salt and pepper to taste
1/2 teaspoons sriracha Sauce
1. Preheat oven to 375 degrees F. Melt 2 teaspoons of coconut oil and pour on a baking sheet. Using your hands, toss sweet potato in coconut oil until evenly distributed. Season with a pinch of salt and pepper and bake in the oven for 15 minutes.
2. In a medium pan over medium heat, melt 1 teaspoons coconut oil. Prepare the eggs anyway you desire.
3. Once eggs are done cooking, remove eggs and add 1 teaspoon coconut oil. Add BroccoLeaf and 2 tablespoons of water or broth. Cover and cook until wilted, approximately 3 minutes.
4. Mash avocado on toast, add egg on top. Scoop the BroccoLeaf onto the plate and top with a spoonful of sweet potatoes. Add a pinch of salt and pepper and a drizzle of siracha sauce.
