Preheat oven to 400 degrees F. Melt coconut oil and drizzle on a medium baking sheet. Add sweet potatoes, thyme, salt and pepper to the baking sheet. Using your hands, toss until evenly coated. Place in the oven and cook for 25 minutes. Garnish serving plate with thyme springs.
