What you will need...
1 whole wheat pizza dough (see my recipe for whole wheat pizza dough)
2 medium tomatoes, diced
1/2 red onion, diced
1 clove garlic, minced
1 handful basil, chopped
1 tablespoon olive oil
2 tablespoons balsamic vinegar
a pinch of salt and pepper to taste
2 ounces fresh mozzarella cheese, cubed
How to make...
Start with the bruschetta (it's always better if you make it and let it sit for a few hours). Add the tomatoes, onions, garlic and basil in a medium bowl. In a smaller bowl, whisk together olive oil, vinegar, salt and pepper. Add the dressing to the tomato mixture.
Preheat oven to 375 degrees F. Roll the pizza dough to form a 9-10 inch circle and bake for ~ 10 minutes. Once the dough has baked for a bit, add the bruschetta and top with cubed cheese. Bake for another 7-10 minutes or until cheese melts.
