Nicole Hallissey MS, RDN, CDN
What you'll need
1 small sweet potato or yam, peeled and cubed
1 small butternut squash, peeled, seeded and cubed
3 cups water
How to prepare:
Bring water to a boil. Add the squash and sweet potato and boil for 15-20 minutes or until soft (you should be able to mash with a fork). Spoon the sweet potato and squash out of the pot and into a blender or food processor. In each spoonful, allow some of the cooking water to be transferred to the blender. Let cool for ~5 minutes. Puree until smooth. If you notice the puree is not smooth add a tiny bit of water and blend again until smooth. Transfer a few spoonfuls into a bowl for immediate use. Otherwise spoon the rest of the puree into ice cube trays and freeze for future use.
A few more things: If you add just the right amount of water, this baby food comes out as Stage 1. Keep in the fridge for 48 hours. Ideally use the frozen baby food within 3 months.
